I've been playing D&D for about 6 months with my twin brother and my older brother, and have gotten my character up to 12. My DM (my uncle) was nice yesterday, giving my twin brother (Dwarf Paladin 11) a Holy Avenger and a Belt of Fire Giant Strength, and me (Elf arcane Trickster 12) a Ring of Protection (+2), a ring of Psychic Shielding and a scroll of Ice Storm, along with a scroll of Lightning Bolt. My DM plays with the rule that if you get a scroll of a spell that you already know, you can use it as a Cantrip. He gave my older brother (Dragonborn fighter a +1 Dervish Axe (just a +1 magic double sided axe that has the Parry, Finesse and Versatile traits). Anyway, He got grumpy and had us fall down a chute into an arena with a Goristo, with Mind Flayers entertaining themselves. Anyway, who is more likely to win, the three of us or a Goristo?
Well, the Goristro is CR 17, which makes it a DEADLY encounter for your party of three (it's actually a deadly encounter if you were level 14, so consider it deadly+).
It sounds like you have good magic items for your level though, which will compensate slightly, but I still expect that it's a deadly-rated challenge.
Deadly. A deadly encounter could be lethal for one or more player characters. Survival often requires good tactics and quick thinking, and the party risks defeat.
The Goristo has 310 HP. I am probably going to ask my brother (12th level dragonborn fighter) to tank all the hits because he has 158hp (got really lucky with rolls and has a 20 Constitution).
Your sneak attack (the demon is resistant to spells) will do at least (29 average) 7d6+~4. And keep in mind, you can sneak attack and smite with attacks of opportunity (if he provokes one), for another 83 combined average damage.
His most damaging attack is a goring charge, so if you can get close to him quick, he will have to use his multiattack or give you an AoO.
If your paladin gets dropped before getting at least 4-5 smites on it, your odds drop considerably.
What subclass is the fighter (and paladin)? Maybe they have some more options. The paladin needs to have advantage as much as possible to increase crit chance, and the fighter needs to draw attacks away from rogue and paladin.
Dragonborn is a Champion Fighter with increased critical. Has breath weapon as a young Bronze.
Paladin is Oath of Devotion with those No Fear thingz. The rogue is going to use Fireball (Necklace of fireballs, 9 left) and Lightning Bolt, along with his magic daggers (2 Returning Daggers of Venom). He also has Phantasmal Force, but im not sure if there are any large or smaller things the Goristo would be afraid of. Oh Wait! Asmodeus lol. I know what to do now. Phantasmal force (Spell save DC 19). Wait is the spell save DC 8+proficiency bonus+intelligence or 10+ that. Anyway, if I roll lucky, and the Goristo rolls unlucky, I can make "Asmodeus" come up to the Goristo and do a ton of psychic damage.
I remind you that the goristro takes half damage from fire and lightning (and cold), no damage from poison, and has advantage on saves against magic (including breath weapons). I did mention it was resistant to spells and that sneak attack will be your best bet.
If you know any spells that do a different form of damage and/or doesn't have a save, that might be useful.
I have Glyph of Warding, but I'm not sure how that will help that much. Wait, is the Goristo immune to Acid?
No. Just the damages I mentioned and non-magic weapons. Do you have the monster manual on DDB? Can you see the stat block I linked in previous posts? (Though it is pretty metagamy to do so)

Anyone?
The goristro can do over 80 average damage a turn. If there are also mind flayers joining in, you are probably going to at least lose a PC.
I'm not sure whether the mind flayers are joining in. Right now, they are using us for entertainment.
If we beat the Goristo, then we are probably going to heal then run.

Yikes
Luckily, your paladin aught to be able to put (107 average) 14d8+4d10+20 damage on it on the first turn, and can survive being hit at least once.

Nope.
But I saw just it on the wiki. Double yikes. Well, glad my DM gave the Paladin Belt of Fire Giant Strength.
