Not a rules discussion, but it'd be interesting whether Comp Lang would allow for eventual understanding. What's the flavor of the spell--does it make you hear what they are saying in your own language, or does it just make you magically understand those words, but you still hear the words in the other language? Would the spell have me still hearing "Barna star bak gjerdet" and I'd just know that it means "The children stand behind the fence"? Or would I hear "The children stand behind the fence"?
If I was hearing the Norwegian words, then maybe over time I could actually learn the Norwegian, and it would stick.

This website indicates that you need 24 inches of water to make a ton of alfalfa hay (a big NM crop). So 120 hours to irrigate one acre of alfalfa. This website says the average size of a NM farm is 1,745 acres. So that's 209,400 hours of spell casting for one NM farm.

Sorta.. (mostly). You understand everything heard (as the literal meaning), and understand everything written (with hand placed). If you want to communicate back, you can use the literal words you've heard or touched, but you may end up saying something completely off base if you try to mix & match words without knowing their context (like someone with minimal knowledge of a language trying to converse naturally with a fluent speaker).
However (!!!), if you are just parroting something you've heard, or are reading directly off of written text, it would sound completely natural and fluent!
Ever been to Japan? Most people assume that any foreigner does not speak the language. Retail & food service employees are frequently ordered to make this assumption. Restaurants (even fast food) have double-sided picture menus (English/Japanese) that employees automatically hand to customers, and are insistent that the customer use, even when the customer is speaking fluent Japanese to their face.
Imagine walking into a McDonald's... you walk up to the counter, the cashier asks for your order in Japanese while presenting you with a picture menu. You stare them directly in the eye, SLAM your hand down on the menu, and... fluently order a quarter-pounder with cheese meal.

I'd choose Animate Dead just so I could walk around with an undead servant and see the look on people's faces. Also so I could go to museums and animate medium sized dinos.

Don't irrigate cropland - refill a reservoir. Which would still take an awful lot of time.
Shillelagh might be a handy cantrip.
Honestly, any cantrip or spell that made it more likely to keep my job would come in handy.
