I assumed D&D Beyond would let me build a list of spells I have for the day, but can't figure out how to do that.

I can see the spells, but is there a way to say I know the Frostbite cantrip? How?

In the Builder when making the character on the Class section there is a tab for spells. Go there, see the spell you want to add, click the button next to it.

Or on your CHaracter Sheet go to spells, click manage spells, and in the sidebar that opens find the spell you want to add and click the button next to it.

The button will either be "add" or "prepare". It will depend on your spellcasting class.
