Some friends and I use DnD Beyond on our mobile and I've noticed some of them have different display setups on the character sheets when they turn the phone sideways, but mine doesn't change anything. Is there a way to activate this mode, or is it down to having different mobiles?
Well... the styles tell the browser which styles/layout to use based on what the browser thinks are its available dimensions. The styles include several formats and lets the browser choose. The server doesn't need to know anything about the client resolution. It allows a browser to resize its display area and change the layout without having to pester the server for new information.

Human. Male. Possibly. Don't be a divider. My characters' backgrounds are written like instruction manuals rather than stories. My opinion and preferences don't mean you're wrong. I am 99.7603% convinced that the digital dice are messing with me. I roll high when nobody's looking and low when anyone else can see.🎲 “It's a bit early to be thinking about an epitaph. No?” will be my epitaph.
It's planned to have the character sheet available through the app. No word yet on whether it will be available offline, but that seems to be an important part of the feature request.

The display mode is determined by your screen dimensions and display type. It's designed to pick the best display for your device

Basically, the site asks your device what its dimensions/resolution/pixel count is and bases layout on that.
