If I decide to delete one of my created campaigns here at D&D Beyond, are the characters deleted automatically? Do the players need to disassociate the character with the campaign in order for the character to persist here?
The characters will persist as long as they are claimed by the user. They are attached to their accounts. The only thing they lose access to is any shared resources from the campaign. I dont believe it will make them choose different races or anything if they were using ones from sources you shared.

Nothing happens to characters. They belong to their individual accounts not the campaign. And DDB does not remove options from characters if they lose access to that option, it just can't be readded if removed.
