There are so many possible combos that i think many will be hesitant to answer. The greater question is, "combos that do what?"
For generic role-play pretty much all combos work, it's all in how you play the character. If you're talking mechanics & min/maxing, everyone seems to have their own opinions, some of which actually conform to RaW &/or RaI.
For a max # of proficiencies start rogue multi to ranger(revised is way better) multi to bard, multi to cleric(knowledge domain), best background for this build is cloistered scholar.
Max overkill damage: cl2(grave)/hexblade, half-drow character with elven accuracy feat is likely to do up to 200 points of damage in 2 rounds (1RWA). But then he's got nuthin.
Most attacks/dmg- i like the ranger stalker (2 weap) combo w rogue (swash-assn is redundant) @lvl5 rang you get 2+ambush attack & offhand weapon attack=4 attacks round 1. Add that sneak attack & you're getting in there.
There are lots of synergistic sorlock, that is to say sorcerer warlock combos, General advice: keep your warlock level 2 higher than your off class casting level, it maximizes slot availability for those low slot lock spells.
The divine loophole allows a divine caster (cleric, druid,Paladin) to choose their spells daily based on the slots they have not on their level. This means that if you start cleric & then get 5 levels of wizard(personally don't like the 5e wiz, but it has its uses,) you get to pick your cleric spells daily as if you were a 6th lvl cleric. Your spell gain in wiz after level 1 also is based on your total slots. The warlock does not add to this loophole, the text is different for them. Of course a wary DM can close the loophole- since those spells are granted by a deity, (i.e. the DM,) you might pray for Remove curse and get purify food & drink instead.
Wiz Abjurer pairs well with cleric- clerical abjurations trigger arcane ward.
Wiz diviner coupled w monk of the hand let's him avoid ki waste on failed stun strikes.
I like all the monks except slow death. They don't seem to do anything.
Monk-berserker unarmed doesn't stack, but you can make a reckless attack &burn ki to dodge as bonus, negating the reckless attack's drawback.
Kensai-battle master, reaction damage reduction from both rwa&mwa
Shadow monk6-assn. Poof! he's dead.
Grave clerics don't jive with necromancer or warlock undying.
Sorlock shadow/undying
Green pal & feylock
Wild sorc & G00
(Elvish) eldrich knight&Bladesinger
Tief drac sorc fiend pact (pyromancer)
Storm sorc cleric tempest domain(automax that lightning damage)
Drunken monk cavalier
I also like the cavalier paired with ranger Beastmaster for small characters, They Ride their companion!
So as you can see, what you can combo is incredible. Any character can benefit from 1 level of cleric or ranger, a couple levels of fighter or wizard
For hobgoblin build, add feats magic initiate (Cleric) for the spell bless to mimic MM npc Leadership feature, Shield Mastery to mimic Shield Bash feature.
A bit on weird side for stats but....Human Variant Rogue 1, Ranger 1, Bard (lore) 3, Cleric (knowedlge) 1, Warlock 2...proficient in every skill if you work it with the right backgound/invocations and feat. It is possible to do with the standard stat array but you trade high spell casting DC/atk bonus. for skill proficiencies.
The outrider: Gnome Artificer (original UA version)/Ranger (Beastmaster), with DM permissiion have your mechanical servant from the artificer class also be your beast companion and have the form of a steed, then charge around the battlefield shootign things with your thunder cannon.You dont really need ranger but I like the thought that the artificer thinks his creation is alive.
What are some multiclass Ideas, Im looking for good multiclass options and terrible multiclass options.

Great option is a barbarian/druid, sorcerer/warlock, ranger/rouge. Any class could benefit from a few levels of rouge or fighter.

Multi to rogue bard ranger for max skills.
My favorite multiclasses are Gish builds: Paladin 2/ sorcerer X, paladin 2/ bard X, artificer 3/wizard X. I also really like warlock 3/ sorcerer X.
Battle Smith Artificer/Bladesinger Wizard is another good gish mix
Paladin/Hexblade is classic, especially with Oath of Vengeance
Zealot Barbarian/Heroism UA Paladin
Moon Druid/Bear Barbarian
