Could somebody help me to identify what kind of content / subscription I need to buy in order to D&D Beyond's character builder to have a decent amount of options available, so I would be able to do some theory - crafting and experimentation with character builds?
In my very fresh experience with free account this is not possible to even try as most of the nuanced and interesting options (feats, bard colleges, etc.) are simply not available. There's usually a selection of just one or two for demonstration purposes I guess.
This video is a perfect example of what I would like to be able to do within the character builder.
You don't need a subscription to obtain any options for the character builder, but you do need source-book content. I would suggest at the very least buying the PHB for plenty of options, but Xanathar's guide to everything is a good source of options as well and would be my second pick.
Also, if you have the character in a campaign with content sharing on, you will have access to everything everyone else has bought as well.

I recently achieved this same desire by purchasing individual bundles from the player's handbook.
Review PHB in the marketplace and scroll down. You should see individual "bundle" sales available.
In my opinion the price was very reasonable comparatively.
From what I recall, I purchased access to:
1) All PHB Classes
2) All PHB Feats
3) All PHB Spells
Thanks, I've ended up purchasing character design related packs from Player's Handbook and Xanthar's Guide to Everything. Worked like a charm.
