I've noticed that a mammoth is one of the best polymorph options for fighting medium/large sized targets. The trampling charge works wonders when fighting, well, anything medium or large.
Trampling Charge.If the mammoth moves at least 20 ft. straight toward a creature and then hits it with a gore attack on the same turn, that target must succeed on a DC 18 Strength saving throw or be knocked prone. If the target is prone, the mammoth can make one stomp attack against it as a bonus action.
You could easily do up to 50/60 damage in one turn, (and while that is pretty good, the prone part is even better). Not to mention the fact that you are a walking sack of HP.
Polymorph is a 4th level spell, so you should be at least Level 7 to cast it, allowing CR 7 creatures. At level 8 on you get access to the T-Rex, which is slightly better than the Mammoth. At level 7 the Giant Ape is often better because it gets 2 separate attacks. But it is debatable. The Giant Ape can throw and has hands for grabbing as well.
Still, at level 7, often a Mammoth is often your best choice if you have room to charge, but do not need the long range from throwing rocks.

Mammoths are a good option for polymorphing and a fantastic option for wildshape (if you're an 18th level Moon Druid).
Find your own truth, choose your enemies carefully, and never deal with a dragon.
