So I noticed on the Tasha book preorder page was that the subclass described (Fey Wanderer) is currently one of the UA subclasses. Does that mean all of the current UA is becoming official? And this extends to spells and items too.

Not all of them, but a vast majority of them. There was an article on IGN that shows the table of contents page for Tashas, which is basically "Here's whats in it."

Okay. But is Aberrant soul another name for Psionic Soul? I hope so....
The Aberrant Mind was the original name of the Psionic Soul, and it is once again the Aberrant Mind sorcerer.

UA not in Tasha: Spirit Bard, Dragon Monk, Dragon Rider Ranger and Undead Warlock.
Some UA change name like the above mention Psionic soul or Peace domain being the Unity domain.
Also keep in mind that certain features may change or get nerfed like example the Wild Soul Barbarian.
