When you say adapt your adventure league rules, you mean the standard WoTC Adventure League rules/guidelines for character creation? There is no toggle button on the character creator that you could choose that would limit your selection to Adventure League allowed characters (there really should be, but maybe it's in the pipeline). Otherwise all the rules for D&D Adventure League are linked on this page .
If there was a toggle I can see it just doing a narrow down depending on the choices made. So if you made a PHB race, everything is still open but if you went with something in Volo's then evry thing has to be PHB and VGtM.

D&D Beyond FoundersBadEye has mentioned previously that an "Adventurer's League compliant mode" is something they would like to add in the future.
For now, you need to check the compendiums to decide what you're using and from which books.
