Your ongoing problem is that giants move faster than you do; they have a ranged attack with a far longer range than your mass damage spells. So open ground is actually greatly in their favour. Your best hope is tight (relatively speaking) spaces where you can swarm them. Setting fire to the stockade is not as simple as lighting a match and whoever is doing it has a real chance of being discovered and 'rocked' .
