Since the adventure is set in Forgotten Realms, choosing one of the Forgotten Realms factions might be fun? Or using a background from Sword Coast Adventurer's Guide? If you choose Noble (or more specifically, the Waterdhavian Noble) background, a blog post I found suggests choosing from these noble houses to have some hook: Amcathra (horse-breeders and wine-makers), Margaster (shippers and traders with a diabolic connection to Asmodeus) Phylund (capture, train, and sell monsters), or Rosznar (a family involved in some shady underground smuggling). I don't know why without having my hands on the book but presumably the blog mentioned these houses because they are relevant to the adventure?
Make characters who have a reason to be involved in the adventure and to work with each other. If your character has no motivation to continue the adventure, consider the possibility of retiring that character and making a new one?
You can totally redo some character creation decisions. If you can think of a way to better express what you wanted your character to be like in the first place, we can change it.
Starting equipment: take the maximum gold value from the starting wealth by class, then also take the starting equipment of your background and one uncommon magic item of your choice.

Character death is totally on the table (I feel like this goes without saying but could be very upsetting if someone thinks it doesn't go without saying)
Leveling up will probably be some form of milestone, I may keep vague track of XP behind the scenes but it'll be kind of eyeballed.
Don't feel you have to follow the adventure. I will go off book and figure things out as needed.
I generally err towards rules as written and keeping things by the book in terms of rulings, especially in regards to what takes what kind of action in combat. This means it is an action to drink a potion, you cannot both sheathe one weapon and draw another one in the same turn (though you can drop one weapon to draw the other and then retrieve it at the end of combat if it's safe)
I'm not really nitpicky on things like encumbrance* and food and ammo, but try to be reasonable about how many large objects (like big weapons) your character can really carry. *the D&D beyond character creation can track encumbrance for us so we'll see how it works out using encumbrance.
Also since there are two of you, as the adventure progresses I might hand partial control of NPC allies over to you, so you'll end up effectively playing multiple characters.

You find yourselves relaxing in the taproom of the Yawning Portal Inn and Tavern, celebrating your success in collecting the bounty for exterminating some diseased rats in the sewers; this was your first outing together as a duo. You sit at a corner of a sturdy wooden table lit by a brightly burning candle and littered with plates cleared of food and half-drank tankards left behind by other patrons. The sounds of gamblers yelling and drunken adventurers singing bawdy songs nearly drown out the off=key strumming of a young bard three tables over.
Then all the noise is eclipsed by a shout. "Ya pig! Like killin' me mates, does ya?" Then a seven foot tall half-orc, who you recognize as Yagra Stonefist, is hit by a wild, swinging punch from a male human whose shaved head is covered with eye-shaped tattoos. Four other humans stand behind him, ready to jump into the fray. Yagra cracks her knuckles, roars, and leaps at the tattooed figure--but before you can see if blood is drawn, a crowd of spectators clusters around the brawl.
“Well, shit. Lets have some fun”, Maven chuckles, kicking her feet off the table and leaping up. She ascends the nearest pillar to get a view over the crowd, pulling a small piece of amber from her belt pouch as she goes. Turning the amber between her fingers and casting Minor Illusion, she conjures a sound in the crowd behind the tattooed mans’ allies. A deep voice calls, “You five, halt!” Punctuated by the sound of a blade being drawn.
