A quick search of the wagon does reward you with two buckets most likely meant for the very purpose of keeping your beasts hydrated. (And, by the way, a tinderbox is what you need to start a fire. Well, there are other ways, but when three of you have tinderboxes, you might as well make it easy on yourselves.)
Picking up the two buckets, Glynquinal heads back to the stream to get water for the oxen. If the fire isn't going by the time I get back, I'll get it started. Glynquinal thought to himself. We have good capable people here though that understand what needs to be done.
Filling the buckets and returning to the camp Glynquinal listens for any off sounds that would suggest trouble.
Ian, seeing that there are still things to be done before resting, rises, and promptly attempts to make a fire from the kindling and his tinderbox (Does Ian need to roll to start a fire?)
(Earlier I typed that Ian made a mental inventory of what was in the wagon while he was riding in the back. In theory I suppose DM would have given me a list of items in the wagon - which would have included the buckets - am I able to get that list?)
DM confession: I didn't think of adding the buckets to the cart until the problem of having no way to carry the water presented itself. A mess kit would theoretically have at least a pot, which could be used to carry water, but bringing back enough water to hydrate the oxen would have taken so many trips, that seemed a little silly. So, *poof*, buckets in the cart. :)
Specifically for Ian, but you others can read if you want:
The cart is carrying an assortment of mining supplies and food. This includes a dozen sacks of flour, several casks of salted pork, two kegs of strong ale, shovels, picks, and crowbars (about a dozen each), and five lanterns with a small barrel of oil (about fifty flasks in volume). ... And two buckets, which are now being used. ;P I reserve the right to add to this list if I feel like it will help you all out.

If you're using a piece of equipment designed to do a specific task, I won't require a roll. This includes using a tinderbox on wood that isn't soaking wet, using a mess kit to fix a standard meal, and using a medicine kit to stabilize someone. Now, if you're trying to do something out of the ordinary with the item, such as light leather on fire or fix a gourmet meal, I would probably ask you to roll simply because the DC is much higher.

Ian rises and easily starts a fire using a combination of the kindling and wood brought back to camp. (For safety sake, let's just say Gruxx used a handaxe to cut the limbs down into manageable pieces. It would be nice if you all could imagine these scenes and realize that sort of thing would need to be done. I'm fine helping you all out, but mama bird's gonna have to eventually push you out of the nest if you don't start flapping on your own.) The sun has now fully set. The two elves and one half-elf can see 60 feet around the campsite. Gruxx has a limited amount of light provided by the fire. The oxen are settling in to sleep.
Anything else anyone wants to do? I know who's doing what watch. All I need for those are perception checks.
Ouch. I guess that means even with the bonus for my Wisdom and proficiency modifiers, I must have rolled a 1. If this was a tabletop game, I'd be trying out new dice right now ...

I hate to spoil your awesome roll, Gruxx, but you were supposed to roll with disadvantage because you're a human trying to keep watch at night. I'll roll your disadvantage roll: 18.
Despite only needing to rest for four hours per day, the long day and lugging the heavy buckets of water for the oxen exhausted Glynquinal, and very shortly after the others went to sleep, the elf's mind entered its trance state as well. Ian ended his trance four hours later, but he quickly became distracted by a pair of bats that flitted around the campsite during his watch. Gruxx awoke at the beginning of his watch and nudged Herr Doktor awake. The fire has burned to almost nothing by this time, but there is a large amount of starlight, and Gruxx seems to have an uncanny awareness of everything around the campsite on due to his life before living in Neverwinter. Herr Doktor only rolls over and goes back to sleep.
Luckily, nothing happens overnight, and the foursome find things well and good the next morning.
Ian, refreshed from his time chasing bats, realizes that it is morning, and will rebuild the fire with his tinderbox, and have a little breakfast before heading out. "Glynquenal, where did you get that water?" and after breakfast will pack up his bedroll and anything else, and go fill his waterskin. "Does anyone else need their waterskins topped off?" and Ian will take and fill the waterskins of whoever asks.
Gruxx stomps off into the woods and returns with enough food for the group for the day (you won't need to subtract a ration at the end of the day today — excellent remembering your character's abilities!).
The party packs up their things, loads back up onto the ox cart and returns to the High Road. After another day of uneventful travel, they pull over for a second night of camping. Like the first night, they've stopped at a spot off just off the road that is obviously used at various times by travelers. A fire pit which looks to have been used the previous night is surrounded by a few logs for sitting on. A keen ear picks up the sound of running water not too far away. The oxen begin grazing happily.

Having brought only a small amount of rations, Glynquinal decides to take a shot at finding something along the way to cook for an evening meal. To Ian, Glynquinal says, "Do you want to keep the same watches or, switch it up tonight?"

Glynquinal spent some time thinking about the night watch, pondering whether it would be better to let Gruxx take an earlier watch since he wasn't as good on watch at night when it was very dark. So far things has worked out, but later on it could be important.
