Apparently unmentioned in 120 pages of issues is that when choosing a simple weapon or tool for customizing your origin I was offered shortsword as an option. Shortswords are martial weapons. I found the bug on dwarf when trying to replace the racial tool, but other things probably also use the same list. Also, I am getting very frustrated with the inability to choose dragonchess/three dragon ante with that same option.
Confirmed. Only selecting Tool Proficiency to customize, shortsword is in the list of replaceable items.

This also includes all the 'rare' musical instruments (tocken, wargong, yarting, ...) which I have noticed are in factavailable to be chosen with the "Choose a musical instrument" modifier(s) now (thanks for that), but not with the "Choose a tool" modifier(s). Unless this was implemented since yesterday.
I play a druid. I own Tasha's here on D&D Beyond; as I am a Circle of Stars Druid.
When I look at my all of my spells to choose which spells to prepare, I don't see any of the additional Druid spells that are offered (https://www.dndbeyond.com/sources/tcoe/druid). Is there something else I need to do?
Yes, you need to turn on the optional features. See the very first post in this thread for instructions (copied below):

Tasha’s Cauldron of Everything is part of the core setting for Dungeons & Dragons, so there isn't a toggle switch in the character builder to enable/disable the content. It does however provide two significant sets of optional rules: customizing your origin, and optional class features. Both of these can be enabled/disabled on a per character basis, as well as allowing you to choose which of the options you want!
CUSTOMIZING YOUR ORIGIN
When you make your D&D character, you have an array of options in the Player’s Handbook and other books, to create the sort of adventurer you want. The "Customizing your Origin" rules add to those options, making it possible to realize even more character concepts.
These options are accessible using the menu in the character builder (see the image below)and include changing: Ability Score Increases, Languages, and Proficiencies.
I thought from the first post those extra options on the class page were for the Origin, and since I wasn't using that I ignored it. Thanks for providing the clarification!
I just noticed that I cannot add two different fighting initiate feats (as in dueling at lvl 1 variant human, and then throwing at lvl 10 rogue). I assume this is a bug?
Not really. By RAW you're not supposed to take a feat more than once unless it specifically says you can, which this feat doesn't.

I am new to DnD and my son and I just bought the book for TCoE from our local game store because he wants to have a Beastmaster Ranger. Trying to update his character on DnDBeyond, it appears I need to pay another $30 to activate it digitally. Is there a coupon for TCoE for DNDBeyond if you bought the book or am I out of luck?

You're out of luck. This is not the same store nor is it WotC (the publisher).
However, it depends on what is needed. TCoE only offers a few extra options for the Beastmaster, the subclass itself is part of the Player's Handbook. You could get that book instead OR you can just buy the Beastmaster subclass instead for $2.99.

I opened the Vadelkin in the character creator and activated TCoE changes. After hitting the check box to alter the ability scores, the ability score increase box changed to the new one, but did not provide any drop downs to choose the new ability scores.

That the Aberrant Sorcerers Psionic Spell Feature isn't implemented yet nor that there is any indication the team is working on a fix is just kind of sad and leaves the impression that the customer experience is not as important to DnD-Beyond as it should be. We're far past half a year since launch of Tashas and still the subclass is not working as intended. And from what i can get from the first page of the thread there hasn't been any work done on fixes since February. So probably there won't be any fix to this ever.

Edit your character.
Click on 2. CLASS at the top.
Under that and just to the right of CLASS FEATURES, click on OPTIONAL FEATURE MANAGER.
Select additional druid spells.
