I think that Demons and other fiends should be almost completely evil, but given the fact that Angels and celestials can fall, why can't demons and devils have agency to rise? Sure, they're beings of evil, but they have personalities and ideals as well.
In general a fiend that is no longer evil is no longer a fiend, and might well undergo actual transformation (there are some exceptions, but most of the fallen angels in canon have changed powers and appearance). Fiends are not evil because they're fiends, they're fiends because they're evil.
The need for 'hordes of things that can be slaughtered without guilt' is probably best solved by either using things that aren't humanoids, or by a combination of:
Not evil by birth (either chose evil, was turned evil by some curse, or is a made thing)
Avoids standard racial stereotypes ('black-skinned elves' is problematic. A cult of elves that worship an evil spider demon but are not a distinct racial group, other than possibly features like extra eyes and limbs, is less so).
I know what you're saying and agree with you, but I feel that I need to point this out. If you're referencing 'dark elves' with your above statement; they aren't dark skinned. They are called dark elves because they live in the dark, their skin tone actually ranges from extremely pale to like, blue/purple. They are a distinct subset of elves, but I feel that we need to look at whether we ourselves are advancing stereotypes or whether they're inherent in the system.
In any case, I love the idea that demons or devils can rise up. I'd be all for that, and it'd be quite a story to witness as wel .

The more I think about this, the more I keep seeing The Nightmare before Christmas: A Fiend who's known no other way of life encountering something strange that gets a reward from a kind soul.The Fiend with a desire to understand ("🎵What's this? What's this?🎶") tries to emulate what was seen and doesn't quite get it right and goes on a journey of exploration beyond the existence that the Fiend has only known.
Of course, the whole rotting of horns and atrophying of leathery wings would be a big discouragement. So, there would need to be some dangling carrot to lure the Fiend onward past the stigmata changes.
