First time going to a FLGS to play DDAL and I have my character created here, but I wasn't sure if I needed to have a paper AL character sheet to play legally. Thoughts?
The only thing to watch for is that Beyond does not enforce any of the AL PHB+1 limitations. This means that you need to check spell sources to make sure you are choosing ones that conform with PHB+1. There is also some mundane equipment that is only available in certain hardcovers which may or may not be generally available. (Yklwa from ToA for example). At character creation, the most common PHB+1 constraints are character race and cantrip choices. Most of the exotic races are in Volo's which limits class and spell choices for those characters to the PHB. Booming blade and green flame blade are popular cantrips for some builds but similarly limit the +1 to Sword Coast Adventurers Guide so you can't make characters like a Yuan-ti hexblade warlock, a shadar-kai shadow sorcerer or a hexblade warlock using the booming blade cantrip since they all break the PHB+1 rule but Beyond doesn't prevent you making any of these characters since I don't think they have a character creation mechanism for AL specific characters.

It's not an issue. The sheet can be drawn on toilet paper as long as it contains a legal Adventurers League character.

I’m running a half-elf fighter tracked to be eldritch knight, so I’ll have to figure out what +1 to use later.
