The short answer is, you can't. If you add a character it automatically goes in as an ally.
The long answer, is to find a monster of the same CR, and add that. Then when that monster's turn comes up in the initiative order, just take the NPC's turn. We use a lot of NPCs as villains in our campaigns, and this was the easiest solution that we found.
If this is refering to the D&D Beyond VTT then there is a way to turn a PC or NPC to an enemy side and vice versa. Once you start the combat encounter click on the monster, player, or NPC and click change side. It will give you the option of adding them to the party, turning that piece into an NPC, or turning them into an enemy piece.
