Use a random generator! Look through the DMG. There are several great ideas floating about in the books and the internet. When in doubt. Steal ideas! Its ok and totally allowed.
1: Decide what you want the party to fight (combat oneshots are the simplest to make, I find). In this example, this will be a Troll.
2: Decide why they would need to fight said troll. This can be because someone has paid them to do it, or because they are going to find something or someone. It really doesn't need to be as intricate as you might think; a dude at the side of the road with a broken wagons says "We hit something, and before I knew it it had taken our horse - please get it back! I'll give you gold!".
3: Decide where they're fighting - in a cave, in a treehouse, in a volcano. The more interesting the better.
4: Let the players write the story - how they find the troll, how they decide to take on the troll, and so on. Give them environmental stuff they can include (a big rotten tree just waiting to tip over, a pit of flammable tar, a geyser which goes off every 3 turns...) and then let them deal with the troll how they see fit!

The DMG is the Dungeon Master's Guide, do you have the book? If so, that section I linked is on chapter 3.
If not, the encounters of the week that Jesse_DND linked are a good source.
Otherwise, you can just Google for D&D 5e adventure ideas or random tables or encounters, you should find some good free sources.

It provides a bunch of random generated stuff to play with.
