Amusingly, I had a similar monster: A race of little black beetles with a skull-like marking on their backs, sort of goth ladybugs. In great numbers, they gained intelligence, and the ability to animate dead bodies by crawling all over them, and under the skin.
They were alchemists. Anything they ate - basically, any corpse - they could extract essences from, and use those for making potions. Essence of orc would make you strong, or angy, or some such. Essence of elf would make you agile, or stealthy.
Hm, I had a name for them, but I forget.

A spawn of Kyuss might be worth a look, its a CR5 undead, hass regeneration and a rather unique attack where it lauches a worm that burrows under the targets skin. Alternatively go for an undead mimic, its a basic mimic that has evolved to resemble a skeleton (albeit covered it slime), the slimy adhesive works to get the pc;s weapons stuck to it, it's become undead by consuming large amounts of skeletons and zombies over the years and has learned to mimic bone to enable it to shamble around the place while it hunts for more prey.

How about a swarm of zombie limbs maybe treated as like a horrific creature made of limbs sown together. Then when you have allot of them they could come together and form a zombie clot .
I also really like stone cursed they're like half undead half stone zombies and using them as a template to make kind of mud versions of other undead is pretty fun.
also just thought of the Boggle as well, its a fey but ccan do some thigns you want with its slippery or sticky oil secretions sort of like a ghostbusters slimer.
So i want a monster ghoul some type of undead:
- basic human intelligence
- piercing and slashing weapons can get stuck in there body
- much stronger then they look or faster depending on type i think.
the creatures are made by magic and are pieced together from all animals and humanoids... was thinking a worker class and worrier class.
any ideas would help
