I personally am an “official freak” so I typically use dungeon tiles reincarnated with Wizkids minis, or a pathfinder flip mat, which I am going to replace with an official adventure grid.
i just have huge grid paper that i take from the office. has square cm squares. so i could draw entire dungeons on it if i wanted to. instead i just make a few maps for the fights and use scissors to cut it out. If i got a huge dungeon I cut it into pieces and lay it down as "fog of war"
I have a large wet erase battlemap, and a small one, plus a large collection of dwarven forge, and giant graph paper. We'll make specialty pieces from foamcore or syrofoam when we need them :D

Oh man I wish I could afford dwarves forge, but a $4 allowance doesn’t lend itself to things like that...

I use large and small wet erase also. I don't use dwarven forge as they are pricey and not in hexes.

Being an adult and having a job sure does suck, but it does allow me to buy pretty things. :P
I've pretty much stuck to the official WotC merchandise as well: Adventure Grid, Dungeon Tiles Reincarnated (City/Dungeon), Black Cardboard Paper to map out encounters, and a mix of WizKids (Self-Painted) & Monster Menagerie (Pre-Painted) minis.
