As long as you allow the 2014 rules in the character builder (might be under Legacy or some such, I haven't used it enough since the change to remember of the top of my head), you can use the 2014 classes and still select 2024 spells. Some changes that don't have to do with options seem to be irreversible - like the changes to Unarmed Strikes, which display in the sheet with the new rules only - but generally you can mix and match without much hassle.
That said, I do agree, and I kinda wish there were some kind of toggle for each of the revised rules, classes/species/backgrounds, ect. Oh well.

I wish you could pick and choose features to to use from 5.5 vs 5.0 in a campaign on dnd beyond.
Like use the spell changes without class changes and such.
