my question is what challenge ratings of monster(s) should i throw at level 5 PCs or even other level characters
Whatever you want. It's your story.
If you just want to know how hard a combat encounter would be, the DMG and Basic Rules have guidelines for that. XGtE has easier to use guidelines.
