1) Does the light shed by the sunsword count as "sunlight" for the sake of him taking damage from his hypersensitivity AND for the sake of preventing him from shapechanging?
2) Strahd transforms into mist if he is reduced to 0HP and begins traveling back to his coffin. What happens if he takes damage in his mist form at this point? His mist form is immune to non-magical damage, but I guarantee a party member will try to hit him with a magic weapon or a spell before he can run away (especially since the flight speed of the mist is only 20ft). So, assuming Strahd dies if he takes damage in mist form, does this ability really even work as an escape?

The vampire's Misty Escape. power does not have a limit on how many times it can be used; thus, as long as its conditions are met (not in running water or sunlight) and he doesn't take his full hp in a single attack, damage to him at 0 hp is useless (also, mist form can pass through locked doors, and strahd's lair actions let him just move through walls).
Hit him with the sun sword, though, and you can kill him just fine. There are also certain attacks that bypass misty escape (for example, disintegrate), but they aren't ones PCs will generally have access to in CoS.
