By RAW, Mighty Summoner doesn't work with the New Tasha spells. I believe that this simply an oversight and not an intended drawback of the new spells, I'm certain that if Shepherd were made after the spells, the Mighty Summoner feature would be modified to work with the "Summon" spell system.
Here's my suggestion based on taking 3 common Conjure spells which notoriously do work with the Mighty Summoner feature, I took the number of hit dice for CR, divided it by the number of possible conjures, took the average amount of hit dice per CR conjure, and multiplied it by 2 for the +2 HP granted per hit die for Mighty Summoner.
3rd lvl Conjure Animals: CR 0: 1hd + 2 HP CR 1/8: 20hd/11 = 1.8hd + 3.37 HP CR 1/4: 38hd/15 = 2.53hd + 5.07r HP CR 1/2: 25hd/8 = 3.125hd + 6.25 hp CR 1: 49hd/10 = 4.9hd + 9.8 hp CR 2: 50hd/8 = 6.25hd + 12.5 hp
One beast of challenge rating 2 or lower: + 12.5hp Two beasts of challenge rating 1 or lower: + 10.14hp Four beasts of challenge rating 1/2 or lower: + 25hp Eight beasts of challenge rating 1/4 or lower + 40.56hp 88.2hp/4summoning options Average of 22.05 HP per use at third level. Add 22.05 hp per slot 3>

Suggested Modification to Mighty Summoner: 30hp + 30hp(x) where x is level above original casting level.
I am welcome to any suggestions, modifications, or complete reworks to adapt this ability to the Summon Spells. Currently, I am aware that casting lower level summon spells such as "Summon Beast" at a high level, say level 4, has way more HP than the 4th level "Summon Elemental" creature, so, I am seeking a fix to that problem as well.
