I have created a Race for Incubus/Succubus. While it is of course possible to play the race in union with a class, I also wanted to create a Class specifically for Incubi and Succubi.
I am so far able to create much of the class, however, the starting equipment is not easily set. I am unable to find a way to do so. Has anyone found a way to set the starting equipment options for homebrew subclasses?
Additionally, how do we enter the information on the class matrix?

Core class.

D&D Beyond allows you to create homebrew subclasses, but not change the core class, so you cannot change the starting equipment available via class.
You are able to create homebrew backgrounds however, so might consider using these if you have particular requirements for starting equipment to be available to the race.
As for information on the "class matrix" - you add those as subclass features on the homebrew subclass, noting that you should only grant features at specific levels, depending upon the core class.
