I am recreating a race in DDB (from D&D Wiki) and one of the race's traits is called "Thick Skinned". Is there a way that instead of adding the character's Dexterity modifier you add their Constitution modifier when determining their Armor Class?
absolutely it's possible to do this. Here's an example of a race that has a natural armor calculation of 12 + CON bonus.
There are other ways to manage this as well, but this is the simplest, as the "minimum base armor" modifier naturally ignores DEX bonus, unless you select DEX as the relevant stat.

I don't think you can take away the dex based calculation, but you should be able to add an alternative AC calculation.
It would be enough if a Malus option would be added to the pop-up list of choices.
Then You would be able to Malus DEX modifier to AC, then Bonus CON modifier to the AC.
But math in DDB is very far away what is needed. :-(
