Probably anything flying would work - carpet, broom, etc. But there's just something iconic about flying mounts - Wyverns, Dragons, Really massive Eagles, etc.
It depends what "vibe" about fighter pilots that you're trying to capture. Are you trying to simply make an aerial combatant? Are you trying to make someone who fights in fast paced, split second timing combat?
It also depends on who they're fighting. A fighter pilot without aerial opponents isn't a fighter pilot anymore - he's a Close Air Support pilot ( which is way more fun in combat flight simulators, I think - give me an A-10C, or aSU-25A, anyday :) ).
So - how common are aerial mounts in this world? Are you envisioning large cities being defended by "Wyvern Riders"? Do dragons routinely try and attack settlements, so that aerial knight are not only possible, but required?

There isn't really a world for this character yet, it is moreso a "thought experiment" on formulating the finer details of how one might put it together using a fair amount of modifications, but hopefully nothing too extreme.
I would think that if the DM was willing to give out a flying mount, then one would probably want to maybe be a Cavalier Fighter or arguably maybe a caster class (for more diverse rapid fire and "bombing" type options). In either case, sharpshooter or spell sniper would be a must. The only other thing the DM might have to allow that is ABSOLUTELY necessary is something similar to aviator sunglasses.

I do have a kind of place that flying [gliding] would be common, The Great Morass is a volcano/Honeycomb sea mix. that creates a volcano sized geyser every 1d4 months and ups the local Temperature zone, as well as being a continual source of strong, as well as high up-drafts.
Here the most common flyer are kites both messenger and battle.
A common magical support item is goggles that see and measure updrafts.
And as a Great Morass is named after the massive multi-level tropical [even in the arctic] mangrove swamp, dinosaurs offer a source of large and medium flyers.
So, this is moreso just a fun idea I had that I thought people might enjoy trying to build on.
I thought to myself, what if I wanted to try and make a "fighter pilot" (say, like a character from Top Gun) but in D&D?
What would be the best way to do that? Maybe a Cavalier fighter with a flying mount? Or maybe the character has a flying carpet or something.
