I would replace half-elf Skill Versatility with Flight 30 ft. I would not bother adding the weapon training as Flight is already a strong feature.

This actually doesn't have anything to do with rules and game mechanics - which is a topic about official rules as found in the books. What your post is about is a Homebrew race variant of the Half-Elf. It therefore belongs in Homebrew & House Rules forum. I've requested this be moved. Don't worry, easy mistake to make.

Technically, it's a better question to pose to Homebrew & Houserules--as you're definitely homebrewing the race--but I think it's valid to ask here too since you're wanting to work off the existing Half-Elf Variant template.
So first thing is the Avariel Elves never made it out of UA, right? That doesn't matter much since you're homebrewing anyway, but should put in perspective what's feasible to transfer. Flight is a huge deal. Compare the subrace traits of the Avariel and Sea Elf (which was published).
Having a fly speed is effectively "worth":
+1 Constitution
Sea Elf Training (weapon proficiencies)
Child of the Sea (swim speed + water breathing)
Friend of the Sea
That's a lot of stuff, and it's not blown out of proportion either... flying is almost absurdly valuable. Compare with the Aarakocra... beside Talons, Flight is the only thing Aarakocras have going on, and it is still absolutely worth it.
Now with the guidelines on Half-Elf Variants, you're told that you can substitute Skill Versatility (two skill proficiencies) with either Keen Senses (don't do this.. straight downgrade) or a single trait from Elven parentage from the list of approvedsubstitute traits. From the Aquatic Half-Elf, you can see that they will allow a substitution of Skill Versatility for just a swimming speed without water breathing capability! Flying isn't gonna cut it... that's way too much power for replacing Skill Versatility. I'd never allow it, but it's up to your DM anyway.
As for what would be reasonable to give up for a flying speed? Probably everything... Darkvision, Fey Ancestry, and Skill Versatility. You still have more racial ability score increases than everything aside from the standard Human, and more languages. You'd still be coming out ahead.

I've been doing this a long time, so it's pretty easy for me to intuit what players are wanting to do. :P Having a natural fly speed is worth giving up everything.

Do you think it’s possible to keep some of the normal Elvin stuff and the flight, but limit it greatly. Like you can only use flight once or twice before a long rest or something like that? Kinda new to all of this, so I’m still learning how to do home brew classes and races.
