I was curious which one it counted as because i play a paladin and i have the 2 attacks per turn ability, so would i be able to cast a spell like cure wounds for example and still attack twice? or cast a spell and only be able to attack once?
To cast a spell you take the cast a spell action,they are do not count as attacks for the sake of extra attack. You can only cast a spell or attack twice.
Technically, you have the Extra Attack class feature, which allows you to make two attacks when you take the Attack action. To cast a spell, you take the Cast a Spell action. In most cases, you can only take one action per turn. So you can choose the Attack action, and make two attacks, or you can choose the Cast a Spell action and cast your spell. But you can't do both in one turn, and you can't combine them.
There are two different Actions we're talking about here: Attack and Cast a Spell. Most characters can only choose to do one Action during their turn, so you have to choose between them. When a paladin takes the Attack Action, they can make two physical attacks and cannot cast a spell because the Attack Action does not allow you to cast a spell. When a paladin takes the Cast a Spell Action they can cast a spell they know and have prepared, but they cannot make a physical attack.
As with most rules there are some edge cases. A Bladesinger Wizard can cast a spell with their Attack Action as part of their special class feature, but they are still taking the Attack Action and not the Casting a Spell Action. If you have the Booming Blade spell you use it by taking the Cast a Spell Action, but it calls for you to make a physical attack with a weapon as part of casting the spell. You are NOT taking the Attack Action while you cast Booming Blade, but you are making an attack. I like to capitalize Attack when it's talking about specifically taking the Attack Action and then I use small letter when talking about making an attack because for anyone with Extra Attack yuo still only take one Attack Action, vubt as part of that Action you are allowed to make multiple attacks.
Of note, there are also a lot of spells that require attack rolls to hit their target. These are also attacks, but they are used by taking the Cast a Spell Action.

It's all about action enonomy. On your turn you can take 1 action and 1 bonus action and 1 reaction (per turn). That action can be used to Attack or Cast a Spell. Some classes can Cast as Spell as a bonus action or reaction, which leave their action available to them to take the Attack Action as well.

I'm not sure what you mean by that.
A spell tells you everything about it, I know it is not a Paladin spell but look at scorching ray. Casting time is given as 1 action so it takes up your action so you can do nothing else with your action. It also says you create 3 rays of fire and instructs you to make a ranged spell attack for each ray. So if a character uses there action to cast scorching ray they make 3 spell attacks as part of the acton of casting the spell.
No Paladin spell that I am aware of involves making a spell attack as Paladins are best attacking with a weapon. Instead they have spells that enhance their weapon attack many of these have a casting time of a bonus action allowing you to cast the spell and use your action to take the attack action on your turn. An example of this is searing smite
Not exactly. To clarify the order of operations, the Bladesinger technically needs to declare that they are taking the Attack Action. After that, once they have Extra attack, they may substitute one attack roll from that action with casting a cantrip. The weapon attack and cantrip can happen in either order, but regardless you're taking the Attack Action for the turn.
