Ensnaring Strike requires 1 minute concentration until the spell hits, but do you have to retain the concentration as well if the target is restrained by the spell?
Again, I'm not looking for anyone's homebrew answer only the Rules as Intended answer by the creators of the subject matter

The spell says that a target who fails their saving throw is restrained until the spell ends. The spell has a duration of "Concentration, up to 1 minute." If you stop concentrating on a spell, it ends. Therefore, if you stop concentrating on ensnaring strike, the spell will end and the target will no longer be restrained.
It's a good question, that spell has some complex wording.
Simply put, Ensnaring Strike states the target, if hit, is restrained 'until the spell ends'. When does the spell end? Looking at the only duration we have, we can see it has concentration marked there, so we can surmise you have to keep concentrating throughout the effect.
This is generally true of every spell that has a lasting effect that triggers on a weapon attack, and you can use this rule for all of them. Wrathful Smite, Branding Smite, Blinding Smite, and Zephyr Strike are a few that function in either the same way or a similar manner.
So the period of up to 1 minute concentration for this spell covers two things, the time between casting the spell and successfully hitting and enemy, plus the maximum time the target can be restrained. If you lose concentration at any point there, or the target passes the check then the rest of the spell effect is cancelled. Also, the longer you spend between casting the spell and successfully hitting an enemy the shorter the restraint effect will last.

Yes, the spellcaster must keep concentration. The spell ends only when the target succeeds the saving throw.
