Yes you use any senses the familiar have when you see/hears through it. Just remember that when you do so you only uses its senses, you can't pick just one of them (the thread title seemed to imply only using the hearing).
Additionally, as an action, you can see through your familiar’s eyes and hear what it hears until the start of your next turn, gaining the benefits of any special senses that the familiar has.

I’ve been trying to make use of the bat more than the owl. DMs seem to target my familiar much less when it’s not spamming the help action over and over. The Bat definitely helps when using misty step in heavily obscured areas.
bat can “see” through fog cloud and darkness spells, so action to use bars senses, bonus action to misty step if necessary.
I could see it being momentarily useful for a sorcerer to gain find familiar to “see” with the bats senses to quicken a spell requiring sight in a pinch.

The bat's blindsight reaches twice (2x) as far as the crab's.
If you're a warlock though, take Investment of the Chain Master, and give your crab a 40 foot flying speed.

crab might be useful in this way also?
Situationally yes. Less speed (compared to the 30ft fly speed) but has a swim speed instead, the snake also has a swim speed but shorter blindsight.
