Yes, your Arcane Firearm just adds 1d8 to the damage of any spell you cast with it. The wording of ". . . you gain a bonus to one of the spell’s damage rolls . . ." is for spells like Magic Missile that can do multiple instances of damage. For Magic Missile one of the missiles would get the 1d8 boost. Where as for Fireball all the creatures caught in it would take the extra damage since the same damage roll is used on all targets.

Because magic missile specifies that the darts strike simultaneously, RAW you would only roll the 1d4+1 a single time and apply it to all three darts, so the 1d8 would add onto all of the darts because it's boosting that single damage roll. Sadly though, there's no way for an artillerist to get magic missile as an artificer spell, so that combo doesn't actually work in the first place.

Your right, that was a bad example. Technically the combo is possible with the Magic Initiate feat but I seriously doubt anyone would actually pick Magic Missle as their 1st level spell.
Scorching Ray would be a good, relevant example. Only one of the rays would get the bonus 1d8.
I filtered spells by class and didn't see Scorching Ray listed. I guess that is because it is on the Artillerist's expanded spell list and not the general Artificer spell list.

Magic Initiate wouldn't work because Arcane Firearm only works on Artificer spells.

Ah your right, Magic Initiate doesn't change the class the spell is considered to be from.
