Is there any published material on PC race for a satyr? One of my players would love to play as one and I don’t want to build a race if there is a published version.
Strange. I'm not having any issues like that. Maybe check to see what you've got enabled in the character creator? Theros probably counts as "Magic The Gathering Content".

There is no published version of a satyr race.
When will satyr be added? I've purchased Mythic Odysseys of Theros on D&D Beyond, but I can't choose the satyr race.

It is. You'll want the Magic: The Gathering Content slide turned on (to the right/colored) in character creation/preferences.
