The spider climb portion of Dhampir omits the 'without needing to make an ability check' portion that you typically find in regards to the ability when it comes to most other creatures.
Ultimately, my question is, if i were to play a 3rd level Dhampir, would ability checks still need to be made if the walls would usually require such a check considering hands are no longer needed to climb?
Having a Climb Speed doesn't forgo having to make ability checks to climb whenever required. There are traits like Spider Climb that specifically does.
Well, the normal difficulty for climbing upside down along ceilings is probably well above 30 - so the Dhampir climb speed seems to suggest that you don't need to roll.
While a Dhampir's Spider Climb trait doesn't specifically prevent ability checks while climbing like Giant Spider does, I would not ask it for one when climbing upside down along ceiling unless there was additional difficulty such as strong wind or unsteady surface for exemple.
