I just wanted to mention a character must work at least 8 hours of each day to count toward the activity's completion. XGtE, p. 125:
Most downtime activities require a workweek (5 days) to complete. Some activities require days, weeks (7 days), or months (30 days). A character must spend at least 8 hours of each day engaged in the downtime activity for that day to count toward the activity's completion.
The 8-hour workdays is also mentioned in the 2024 PHB or DMG:
Crafting Nonmagical Items: "To determine how many days (working 8 hours a day) it takes to make an item [...]"
Brewing Potions of Healing: "[...] Doing so requires using that kit and 25 GP of raw material over the course of 1 day (8 hours of work)."
Scribing Spell Scrolls: "[...] For each day of inscription, you must work for 8 hours. [...]"
Crafting Magic Items: Time and Cost: "Work per Day. For each day of crafting, you must work for 8 hours. If an item requires multiple days, those days needn’t be consecutive."

I keep seeing “workweek” described as a time you need to work for and I don’t know how long it is, or what it is in general. Could anyone help me?
It probably depends on the setting you're in; in what context did you see this in D&D material?

I saw this in Xanathar’s guide to everything when talking about downtime activities.
I took a quick look at the Downtime Activities section and it says:
"Downtime activities are tasks that usually take a workweek (5 days) or longer to perform."
