I've been trying to find every book with classes and/or subclasses so I can see what they are but I've been unable to find them all. Is anyone willing to help?
Eberron: Rising from the Last War and Tasha's Cauldron of Everything (they both have the same class, Artificer)
Official 5e books with subclasses include:
2014 Player's Handbook
2014 Dungeon Master's Guide
2024 Player's Handbook
Bigby Presents: Glory of the Giants
Dragonlance: Shadow of the Dragon Queen
Eberron: Rising from the Last War
Fizban's Treasury of Dragons
Guildmaster's Guide to Ravnica
Mythic Odysseys of Theros
Sword Coast Adventurer's Guide
Tasha's Cauldron of Everything
Van Richten's Guide to Ravenloft
Xanathar's Guide to Everything
There are also several third-party "partnered content" books on D&D Beyond that include subclasses, but these aren't usually considered official D&D content.

There are more than you could list, I would bet.
