I've been trying to find every book with classes and/or subclasses so I can see what they are but I've been unable to find them all. Is anyone willing to help?
Eberron: Rising from the Last War and Tasha's Cauldron of Everything (they both have the same class, the old Artificer)

There are more than you could list, I would bet.
If you include the HomeBrew subclasses found on DDB, there are more than enough to keep you busy.
