The “Order of Scribes” subclass has a feature that greatly decreases the time, and the 2014 school-based subclasses cut it in half for their specific schools, but as far as I’m aware those are the only ways to get around that in official 5e material.
The Wish spell can do this but you're taking a 33% chance to never being able to cast wish again, so not worth it, it is also 9th level, so you're not getting it until Wizard level 17. At the point of using Wish, you don't even need to copy it, you're just reforming reality so that your spellbook already contains a usable copy of the spell you wish to learn... given Wish itself can replicate any spell of 8th level or lower, it's better to just cast wish to replicate the spell you're after and not suffer the 33% chance to permanently lose wish.

I believe Arcane Tricksters have an ability like what you are describing. It’s not a spell though.
Kind of, they have the ability to temporarily steal knowledge of a spell that's cast at them. It only lasts for 8 hours and they only get it at level 17, though.
Is there a spell that can copy a wizard spell from one book to another, or from a scroll to your wizard's spell book?

No, but that's a standard feature of the Wizard class; you don't need a spell for it, though it does take some time and gold.

The AD&D Tome of Magic i believe had the Copy spell but it doesn't exist in 5E. It would be easy to homebrew though.

Get a cart to ride in during travel and use travel time to copy spells and scribe scrolls.
