If indeed the ability of dragonborn comes from a magical nature it would work. It also means a dragon and a dragon born could not use their breath weapon in antimagic fields.

Nope. If it were meant to be a magical effect in that sense, the text for it would say so. See "Is the breath weapon of a dragon magical?" in the Sage Advice compendium. Compare to an Adult Gold Dragon's Change Shape which says it magically polymorphs; contrast to a vampire or werewolf's Shapechanger which says it polymorphs, but not magically.
Likewise, a lycanthrope doesn't suddenly become vulnerable to attacks in an antimagic field.
Then it is clearly not magically and therefore must be organic. This is a really easy concept. There really isn't a it's magical but it's not answer.
By your logic elementals, constructs, and undead should cease functioning in an antimagic field, since they're clearly not organic.
I don't see how trying to guess if an ability is biological is easier than just reading the stat block. Does it say the ability is magical? Then it is. If it doesn't, it's not. Simple.

I would also say a lycantrhope who has been polymorphed no longer has their immunity.
