That is correct. Full casters can get 1 new and 1 replaced spell of the new highest level they have a slot for.
Rangers get higher level slots at a different level than when they learn new spells, so in order to have their highest level spells available, replacing is a necessity.
The Warlock gaining 5th level gains a new 1st, 2nd, or 3rd level spell and can swap out a spell they already know for a different one. So the example character gains a new spell and additionally can replace Hold Person with Hypnotic Pattern. The spell learned as a replacement for an old (now forgotten) spell can be of any level the character has spell slots for, it does not have to be the same level as the spell being replaced.
How does one do that on Dnd Beyond character sheet?
On the big panel to the right, move to the Spells tab. There should be a button "Manage Spells" on the far right side. This brings up an extra panel that lets you add and remove spells based on your current class availability. The wonky one is Wizard, since their ability to enter spells into their spell book is determined more by the charitably of the DM than it is by character progression.
Late reply - but for those (like me) coming to verify this rule, just don't get too greedy with the high level spells as they can only be cast using those higher level slots, of which you have fewer.

It works based on the mutliclass spellcasting rules. That is - you choose your spells per spellcasting class as if you were single-classed in that class. So a level 2 sorcerer cannot ever choose to learn a 2nd level spell because it doesn't have 2nd level spell slots.

The Warlock Description says this above that line: "A spell you choose must be of a level no higher than what’s shown in the table’s Slot Level column for your level. When you reach 6th level, for example, you learn a new warlock spell, which can be 1st, 2nd, or 3rd level." It's... a slight oversight that they didn't word that part you quoted with more clarity about the Warlock. Probably the best way to see it is, while a spell may be of a lower level than the spell slots a Warlock has, it's still a spell they'd be able to cast with those slots (since upcasting always works.)

Thanks. I think it was just an issue of 5e trying to keep consistent wording wherever they can, in this case with the other casters, but that makes it hard to tell between RAW and RAI sometimes.
So this swapping out of spells. I have a lvl 5 ranger, spells are hunters mark goodberry and hail of thorns at lvl 6 im going warlock. Can I swap out hunters mark for hex and take another ranger spell?

You'd be getting Hex via the Warlock class so that's not a swap-out. As for swapping out Hunter's Mark for another Ranger spell, you'll need to ask your DM, because you technically aren't leveling up in Ranger when you gain the level of Warlock.

Yea there's nothing saying the spell you're getting has to be the same level as the one you're replacing.
