in theMM page 51 it mentions Demonic Possession but doesn’t go to heavily onto the subject and there are no rules. In any other resources are their any rules or guidelines for demonic possession? Which demons can do it? Whom should they be able to posess? Does the posessee have a save to resist the possessor?
is there a template like fiendish or demonic I could use to represent such possession afterwards?
The only other reference I could find anywhere was the DMG mentioning charisma saving throws being used for "Withstanding effects, such as possession, that would subsume your personality or hurl you to another plane of existence"
That is pretty much it. I guess the rest is up to DM.
You can find several monsters in Storm King's Thunder that can possess a living humanoid. I think it's a charisma saving throw to resist, but I'm not sure if the target gets any subsequent saves. The ghost's victim does not, I think.

Possession seems pretty rare. You can search Possession on the site and select monsters that can do it as an ability in their stat block. ghost

Unapologetic.
I just stumbled across an old (1978) Dragon Magazine article about demonic possession. You can find it online at: https://annarchive.com/files/Drmg020.pdf
