My character is a gunslinger and I was wondering if I could reload if I had a shield. Since you need one hand to reload, but one of the gunslinger builds says to use a shield.
Just going off the default Gunslinger build on DDB, you wouldn't be able to. But it also doesn't include any detail about shields... I'm guessing the Gunslinger Archetype you're using is some kind of homebrew? If so, it should include some detail about the shield use... if not you and your DM would have to homebrew something of your own. The closest I could see to solving this problem would be kind of complicated, but using the Quickdraw feature if you kept 3 or 4 loaded guns on you during combat you could quickly stow and draw fresh guns rather than need to reload.
I would assume reloading requires two hands, whether your firing bullets or using gun powder and shot you need one hand to hold the gun and a second to feed in the ammo.

Not sure which build specifically requires a shield, but you would need a free hand to reload. However, the firearms have different reload metrics. The pepperbox is "reload 6", so only needs to be reloaded after 6 shots (attacks). Pistol is "reload 4", etc. So for these, you could effectively have a shield and get off multiple shots before having to drop the shield for reloading.
RAW I think you'd have to empty your gun, stow your shield, reload, and then take the shield back out. In some instances, stowing/unsheathing a weapon is considered a free action, so I'd look into whether that applies, or if you would have to keep your shield stowed till your next turn.
