Let's play what if. What if I cast the Contingency spell and use Polymorph as the designated contingent spell? What if the trigger is Polymorph into a Huge Giant Crab if I fall to 0 HP?
Because both spells are cast during the casting of Contingency, and it's only the effect that's delayed pending the trigger, would this then restore me to consciousness as the polymorphed creature?
Also, since the material component needs to stay on your person, I'm assuming it can be used to cast the spell again in the future rather than being consumed?

Polymorph has no effect on a creature with 0 hit points. A span of time between the casting of the spell and the effect doesn’t change that.
Never mind my initial reply. It blatantly spells out that you're correct in the spell blurb lol
