Crafting an item has rules in the same book, page 128 (or here), although it doesn't include an actual list - it's safe to say that the DM can assign a cost (and possibly a DC for more complex items) for anything related to your art that you want to attempt.
As for the ability used, I'd have someone roll Intelligence or Charisma for a task that mainly includes the design of a piece of jewelry, and Dexterity for polishing or modifying a gem or creating a piece of jewelry, or any similar task, but your mileage may vary depending on the DM.
What Onyx said, but my personal opinion is that Wisdom is the ability score that would be used for artistic design and creativity (painting and cooking and the like).
My character (halforc,warrior) has acquired expertise in jeweler's tools. Exists a list of items to create with their CD?
What is the characteristic that I should associate with these tools? I was thinking of dexterity.
