Goliaths have the humanoid type. If a player character race has a type other than humanoid, it will be noted in their character stats- to my knowledge the only PC race that isn't considered humanoid is the centaur, which has the fey type. If Goliaths aren't available as ranger favored enemy, it's presumably an oversight due to how uncommon the race is.

Are Goliaths subject to the extra damage dealt by Giant Slaying weapons?
I think they are considered humanoid and not giant. Not 100% sure though.
Goliaths, at least the PC versions, are indeed humanoid and are not affected by giant slayer weapons.
I thought this as well but they are not a choice for a Ranger's favored enemy under humanoids so it made me wonder.
