My character concept is that my human cleric was raised in a monastery, worships Valkur. one day A cult of Auril's follower attack the place driving them out, and casting a curse on them, causing them to wander the wasteland without humanoid contact for 15 years. My character is sort of a grizzled character, slightly insane from the time wandering the region, clothed in raggy traveler's clothes, wields a quarterstaff, and has blue fingers from hyperthermia.
Now my two builds. My character has these ability scores in order (Stre 14-15, Dex 14, Con 14, Int 10, Wis 16, Cha 9)
The First and original is Taking a 10-11 levels of cleric and 1-2 levels of monk for unarmored defense and unarmored movement and martial arts. I have a decent dex score for martial arts, and unarmored defense fits what he wearing.
The second is more traditional, a single class cleric, wearing shield and plate. My Dm is allowing me to take shillelagh as a cleric cantrip.
Yo, if your DM is letting you take Shillelagh, go for that. Monk is kind of crap for only taking a 1-2 level dip... you only get 2 ki points and your martial arts die is so low you're better off just carrying a rock to whack people with. With 2 levels you don't even get into any subclass benefits. Shillelagh is a good enough cantrip for someone interested in going in for melee combat that it's often worth a feat to take Magic Initiate to snag it from the Druid class, so getting it for free by your DM is a nice boon.
Dude... take Shillelagh, and call it a day. That's a solid win.

If you want to go melee, shillelagh is all you need.
You essentially gain nothing from multiclassing monk. Unarmored defense is less AC than a shield and armor. Martial Arts are less than shillelagh. Plus you give up higher level slots and features.
The monk multiclass is certainly viable if that is what you want to do for roleplay/style reasons, but if avoid if you are focused on optimization.
Fighter/Paladin/Ranger for a Fighting Style, and various extra ribbon abilities
Sorcerer for a wide range of non-Cleric spells, and Metamagic
Otherwise, going full Cleric is usually the best option.

I could take 3 levels but I would miss divine intervention, along with a 6th level slot

Overall, Cleric & Monk multiclassing is better when you're a Monk that's dipping into Cleric for some spells.
