Unarmored AC is 10 + Dex and a githzerai monk has +2 dex which would mean it's unarmed AC would be 12. Seeing as they have a +2 Wis modifier, it's safe to say their psychic defence is included in their AC of 14 (10 + Dex (2) + Wis (2))
What Davedamon said. Normally any traits that affect a creature's statistics are already factored into the rest of the stat block. Usually the trait will tell you that the stat block has already been adjusted but for whatever reason they didn't do that with the Psychic Defense trait.

According to 5e MM, Githzerai Monk (for example) has AC 14, but also says:
So, does that mean that its AC is 16 (14 +2 Wis) when now using armor or shields, or does the 14 already include this (12 +2 Wis)?
