there seems to be enough information on the dark side of the force, lol, with the difference between demons and devils... but i cant find any real information that would help sort out the types and rolls and concepts of the Celestial... can someone point me in the right direction?
You have a variety of sources, including the Monster Manual and Forgotten Realms Wiki.
The short of it is, celestials are native to the Upper Planes. So already they have a head start. They're not made from the ingredients found on the Prime Material plane, so they're not a humanoid race—they're Outsiders. Celestials are grouped into several categories. I can't recall them all, but the ones I do remember are the angels, archons, and the eladrin. THere's one other grouping . . . I can never remember the fourth "type." For a thorough read, I'd recommend the Monster Manual.
The city council would like to remind you about the tiered heavens, and the hierarchy of angels. The reminder is that you should not know anything about this. The structure of heaven and the angelic organizational chart are privileged information, known only to the city council members on a need-to-know basis. Please, do not speak to or acknowledge any angels that you may come across while shopping at the Ralph's or at the Desert Flower Bowling Alley & Arcade Fun Complex. They only tell lies and do not exist. Report all angel sightings to the city council for treatment.

Isn't the fourth type some sort of animal-based angel? The Guardians, I want to say? I also believe it's the Paragons that stand opposite the Archfiends.
Are the Eladrin in the MToF? I seem to recall seeing them in a table of contents as a player race, perhaps they're separating the celestial beings from the more High Elf variation from 4e?
Guardinals are the animal-based Celestial type. The seemed to do away with the Celestial Eladrin, who were sort of Celestial Fey of various types, and replaced them with "Even Higher High Elf" in 4E. Never was a fan of that change, honestly, Elves have enough sub-races as it is in my opinion. That's not exactly relevant to the topic though, so I'll leave it there.
