There are many downsides to multiclassing, especially when mixing pact magic/spellcasting/non-magic. Warlock, Paladin, and Sorcerer are commonly combined, but Bloodhunter doesn't have the same synergy.
If your goal is mechanical, then you're probably drawing yourself too thin.
If your goal is RP, it's usually easier to reflavor a single class than to mix a bit of everything.
My question would be what parts from those three classes make you want them? Is there specific abilities, or just the class itself? Give us as much insight as you can.
