By level two I will be a Fighter/Rogue (Melee-Assassin), so which to go by first doesn't matter role-playwise so I am wondering - which to go by first from a rules perspective?
Given that I will use light armor anyway and two HP doesn't matter much it is basically a question of +1 skill and dex/int saves (rogue first) or con/str saves (fighter first).
I instinctively throught it made sense to go fighter first, but I am not entirely sure anymore. The initial idea was that with high dex and eventually Evasion that department would be covered anyway, so Con would be more important to the point of being worth a skill. That said it also seem to matter if I go to lv 11 with rogue to get reliable talent (making all proficiencies a lot more valuable) or not.
Investigate, Intimidate and Sleight of Hand are all skills that could fit the character and be useful.
As for shield, that is not an option, I will be using a mix of dual-wielding, free-hand and bow leaving us right with the core question - Con save or Dex save+skill :)
I don't know. I'm sorely tempted to tell you to just take the skill and have done with it, though. On the other hand, if you can't find another rogue skill that works for your character--which is unlikely but possible--you might as well just take the Con save and the extra hit point.
I do expect you to come back and tell us about the time that one hit point makes a difference, just so you know.

If it doesn't matter that much to you which class you start in just flip a coin. Heads: Fighter, tails: Rogue.
That said, what subclasses do you think you will select? If either includes spellcasting and concentration spells then you should go Fighter first for the Con save proficiency, which applies to concentration checks.
You may also want to think about the types of effects that are assigned to each save type. Spells that target Dex are typically damage only spells (with save for half), which Evasion can mitigate somewhat, while spells that target Con can apply some debilitating debuffs.
If: You are playing in a party with at least one other tanky character and/or you think you will have someone who can flank for you, probably go Rogue.
If: You are playing in a party in which you are going to be the meat shield and/or no one can flank for you, go Fighter.
Related: I worked out the stats for a Variant Human Rogue 15/Fighter 5 just recently. He starts at Rogue and takes the Resilient feat, putting it in Constitution. Then, at level 15, he gets proficiency in the Wisdom save. So he has all the "important" saves. Also, as a level 15 Swashbuckler with Extra attack (because 5 levels in Fighter), he is looking at an average of 100 damage per round that he hits with all 3 of his attacks, or 200 on Action Surge.

Now we are at the core. One could rule that evasion and dex prof compliment each other, but one can also say that evasion makes dex save less important (since you get half anyway, and a high dex gives decent save anyway).
I sort of think con save proficiency is better than dex when you have evasion (for a more rounded defenses), and that str save prof (push effekts) is a lot better than int save prof (hardly any).
If that logic is sound the question comes down to that advantage beeing significant enough to lose a skill proficiency, for instance sleight of hand.

If you want a shield, fighter. And the difference in HP between a fighter 1/rogue 1 and a rogue 1/fighter 1 is 1, not 2.

Definitely Rogue first or you'll lose valuable skills. The only thing you'll lose adding fighter later is heavy armor. IIRC.
Perpetually annoyed that Eldritch Knights can't use Eldritch Blast, Eldritch Smite, and Eldritch Sight.
And that's all I have to say about that.
Adding my 2 cents towards fighter if you plan on using heavy armor, a shield, or spellcasting, as mentioned previously.
Rogue otherwise; DEX save proficiency and Evasion naturally complement each other, and extra skill proficiencies are nice.
